RECIPE:
Apple Cider Pumpkin
Bread
1-cup apple cider
1-cup canned pumpkin puree
2-eggs
1/4-cup vegetable oil
3/4-cup firmly packed brown sugar
1/2-cup grated apple, peeled
2-cups all purpose flour
1/2-tsp baking soda
2-tsp baking powder
1/2-tsp salt
1/2-tsp ground mace
1/4-tsp ground cloves
1-tsp cinnamon |

In a saucepan, boil the cider until it has reduced to about 1/4-cup;
set aside and let cool
In a bowl, whisk together the pumpkin puree, eggs, oil brown sugar,
grated apple and the reduced cider
In another bowl, whisk together the flour, baking powder, salt, baking
soda, mace, cloves and cinnamon
Add the flour mixture to the pumpkin mixture
Stir until just combined
Transfer batter to a well greased 8x4-inch loaf pan
Bake in a 350*F pre-heated oven for 1-hour or until tester comes out
clean
Let cool
Makes 1 loaf
