BREAD RECIPE: Banana Bran Muffins

1-cup whole-wheat flour
1-cup bran
2 1/2-tsp baking powder
1-tsp cinnamon
1/2-tsp salt
1/2-cup currants or chocolate chips
1-large egg
2-tbsp canola oil
1 1/4-cup mashed bananas
1/4-cup brown sugar
1/2-cup skim milk

Line muffin tins with paper cups
In a medium bowl, combine flour, bran, baking powder, cinnamon, salt and currants or chocolate chips
In separate bowl, mix egg, canola oil, mashed bananas, brown sugar, and skim milk
Add to dry ingredients and stir until just combined
Spoon into muffin tins
Bake in a preheated 400* oven for 15-20 minutes, or until a toothpick inserted in centre comes out clean

Makes 12 muffins
