BREAD RECIPE: Banana Oatmeal Muffins


1-cup rolled oats
1-cup milk
1-cup all purpose flour
1-cup bran
½-cup white sugar
5-tsp baking powder
1-tsp baking soda
½-tsp salt
½-tsp cinnamon
¼-tsp nutmeg
¾-cup raisins
¼-cup margarine, melted and cooled
2-eggs or egg substitute
2-tsp vanilla
2-cups mashed ripe bananas (4-5 medium)

Combine oats and milk and set aside
In a large bowl, combine flour, bran, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and raisins
To the wet oat mixture, add melted margarine, eggs, vanilla, and bananas
Add wet ingredients to dry ingredients and stir only until flour is moistened
Fill greased muffin cups and bake at 375* for 20 minutes

Makes 12-16

HINT: If you never end up with 4-5 really ripe bananas at a time, pop any old bananas, peeled, in a bag and throw them in the freezer. When you have enough, then it's time to make muffins or banana bread
