BREAD
RECIPE:
Cheddar Cornmeal Muffins
1-cup flour
1-jalapeno, minced (optional)
½-cup cornmeal
1-heaping teaspoon baking powder
½-tsp salt
Pinch of cayenne
1-cup milk
1-egg
¼-cup melted butter or margarine
1 ½-cup grated cheddar
½-cup cooked crumbled bacon
Stir together flour, cornmeal, baking powder, salt and cayenne
Beat egg with milk and butter; add to dry ingredients
Stir to moisten
Stir in 1-cup cheese, bacon, and jalapeno
Spoon into greased muffin cups
Sprinkle with remaining cheese
Bake at 375* for 15-20 minutes
Makes 8 large muffins
