BREAD
RECIPE: Lesley's Low Fat Oat Bran Muffins
2 ¼-cup oat bran
1-tbsp baking powder
½-tsp salt
Dash of nutmeg (or allspice)
¼-cup brown sugar (or maple syrup, honey, molasses))
2-tbsp chopped almonds (or macadamia, walnuts)
½-cup dried cherries (or raisins, cranberries, fresh blueberries)
½-cup chopped dried mango (or apricots)
1-cup chopped fresh pineapple
1-cup mashed banana
¾-cup milk
½-cup concentrated juice (pineapple or apple)
2-egg whites (or 2oz. egg substitute, or 1 whole egg)
Preheat oven to 450°F
Combine all dry ingredients in a mixing bowl
Blend in remaining ingredients, mixing thoroughly
Line muffin tins with jumbo paper liners
Fill to top with batter (they don’t rise much)
Bake for 17 minutes
