RECIPE:
Rhubarb Muffins

2-cups self rising flour,
3/4-cup sugar,
1-egg (lightly beaten),
1-cup milk,
50-mls canola oil,
2-cups rhubarb (finely chopped)
Preheat oven to 210ºC (400ºF)
Sift flour, add sugar, rhubarb, egg, milk and Canola oil, mix until combined.
Spoon into muffin tins ( I use paper cases in mine)
Mix a little raw sugar and cinnamon together and sprinkle over muffins before cooking
Cook for 15 to 20 mins
Nice eaten hot or cold
(You can also substitute apple for rhubarb in this recipe)
