CANNING RECIPE: Lesley's Pizza Sauce


1-28 oz can tomato sauce
1-28 oz  can tomatoes

2-cups chopped onion
31/2-tbsp basil
31/2-tsp oregano
6 or 7 garlic cloves, crushed
1-tsp pepper
Salt to taste
1-tsp thyme
1-tsp crushed chillies
1 1/2-tbsp chipotle in adobo sauce (pureed)
2-bay leaves

1/2-tbsp bottled lemon juice per 1/2-pint (250ml) jar


In a large pot, combine all ingredients except lemon juice
Bring to a boil, reduce heat and simmer for 20 minutes
Remove bay leaves
Puree
Add the 1/2-tbsp lemon juice to each jar
Ladle hot sauce into 7 clean and sterilized 1/2-pint canning jars leaving 1/4" headspace
Remove air bubbles with non-metallic spatula and wipe jar rim 
Top with hot lid and rings, finger tight
Process in boiling water canner for 20 minutes

Makes 7 half-pint jars
