RECIPE:
Nin's Hot Pepper Mix

Jalapeno peppers
Carrots strips
Pearl onions
Cauliflower
Bottom each quart jar:
1-tbsp canning salt
1-tsp oregano
3-tbsp olive oil
2-3 cloves garlic
Brine- 1 part water to 2 parts vinegar
Each jar, pack a row of peppers, carrots, onions, & cauliflower, until full
Add warm brine to jars leaving 1/4 inch headspace
Adjust two-piece caps
Process in hot water bath for 15 minutes
This was my Grandmother's pepper mix that I use today. (I called her
Nin).
