DESSERT RECIPE: Banana Gelato with Rum

4-slightly overripe bananas
1-cup milk
1-cup whipping cream
4-egg yolks
1/4-cup granulated sugar
2-tbsp rum

Peel bananas and cut into thirds
In a heavy bottom saucepan, bring bananas, milk and whipping cream to a boil over medium-high heat
Reduce heat and simmer until bananas are very soft, about 5 minutes
Let cool for 10 minutes
In food processor, process banana mixture until smooth
In a large bowl, whisk egg yolks with sugar until pale yellow and frothy
Slowly whisk in banana mixture
Return to pan and cook over medium-low heat, stirring constantly, until thick enough to coat the back of a spoon, about 5 minutes
Strain into bowl, pressing solids through sieve with a spatula
Place plastic wrap directly on mixture surface
Refrigerate until cold, about 1 1/2-hours
Stir in rum
Freeze in ice cream maker according to machine instructions

Makes 6-8 servings
