RECIPE: Caramel
Pudding
1 3/4- cups hot milk
1/4-cup sugar
3-tbsp. cornstarch
1/8-tsp. salt
1/4-cup cold milk
1/2-tsp. vanilla
1-tbsp. butter
1/3-caramel syrup
Heat milk in a double boiler, stirring constantly
Mix well: sugar, cornstarch and salt, blend with a little milk to make a thin paste
Stir the cornstarch paste into the scalded milk
Continue to stir until there is no taste of raw starch and the mixture has thickened
Cover and cook for another 5 minutes
Remove from heat and add vanilla, caramel syrup and butter
Put in serving dishes, cover with saran wrap so a skin does not form
Refrigerate
