RECIPE: Chocolate
Pudding
2-cups hot milk
3/4-cup sugar
3-tbsp. cornstarch
1/8-tsp. salt
1/4-cup cold milk
1/2-tsp. vanilla
1-tbsp. butter
3-4-tbsp. cocoa
Heat milk in a double boiler, stirring constantly
Mix well: sugar, cornstarch, cocoa and salt; blend with a little of the milk to make a
thin paste
Stir the cornstarch paste into the scalded milk
Continue to stir till there is no taste of raw starch and the mixture has thickened
Cover and cook another 5 minutes
Remove from heat and add vanilla and butter
Put in serving dishes, cover with saran wrap so a skin will not form
Refrigerate
