DESSERT RECIPE: Fruit Crepes


Crepes
1-large egg
1/4-cup milk (possibly more to make very thin batter)
1/3-cup water
2/3-cup all-purpose flour
1-tbsp vegetable oil
1/4-tsp granulated sugar
1/16-tsp salt

Filling
2-squares of white Bakers chocolate
1 1/2-cup fresh fruit cut into small pieces (we like to use blueberries)
1-tsp liquid sweetener

Topping
1-cup frozen whipped topping
4-tbsp semi-sweet chocolate chips, melted


Crepes
Beat egg in small bowl until frothy
Add remaining ingredients and beat until smooth
The texture should be very very thin
Using a heated nonstick pan, spoon about 2-3-tbsp of the batter in the pan
Tip the pan in a circular motion to spread thinly and evenly
Brown lightly on one side only
When its done, you'll have air bubbles coming poking through the top
Remove from pan, and let cool and continue on with making the rest of the crepes

Filling
In a bowl, combine the fruit with the liquid sweetener; stir to coat
Melt the white chocolate in a double boiler and then spread on the light side of each crepe
Place the fruit in a strip down the center of each crepe
Roll
Pipe whipped topping over crepes
Drizzle with the melted chocolate chips
