RECIPE:
Key Lime Pineapple
Squares
Base
1-cup graham cracker crumbs
2-tbsp sugar
1/3-cup unsalted butter, melted
Filling
1-300 ml tin unsweetened condensed milk
4-large egg yolks
2/3-cup key lime juice (or regular lime juice)
1-tbsp finely grated lime zest
1-tsp vanilla extract
1-cup crushed pineapple, well drained
Preheat oven to 350*F
Line a 9-inch square pan with parchment paper so that it hangs over
the sides
For crust, stir crumbs and sugar to combine
Stir in melted butter; mix well
Press into prepared pan
Bake for 8 minutes and then let cool
For filling, whisk all ingredients except pineapple together until
smooth
Once combined, add in drained pineapple, stir to distribute evenly
Pour into cooled crust and bake for about 25 minutes, until edges
bubble
Allow to cool at room temperature
Chill completely before slicing
