DESSERT RECIPE: Lemon Bars


Base:
1-1/4-cup all purpose flour
2-tbsp icing sugar
2/3-cup chilled unsalted butter, cut into small pieces
Filling
2-large eggs
1-cup white sugar
Zest & juice of 2 lemons
3-tbsp all purpose flour
1/4-tsp baking powder


Base:
Preheat oven to 350*
Grease an 8 inch square pan
In a food processor or blender, pulse the flour, icing sugar, and butter until the mixture looks like sand
It should take 2-3 minutes
Pour into pan and pat down firmly with your hands
Bake 15 minutes or until just brown
Filling:
Meanwhile, in food processor or blender, pulse the eggs, sugar, lemon zest and juice, flour, and baking powder until combined
As soon as the base comes out of the oven, pour the filling on top
Bake lemon bars for 25 minutes, then cool in the pan on a wire rack before cutting into squares

Makes 16-24 bars
