Lemon Gelato

1/2-cup lemon juice
1/2-cup castor sugar
1/2-cup sweet or dry white wine
1/2-cup water
1-egg white

Place sugar, water and wine in a small pan, stir over low heat until sugar is dissolved
Bring to a boil, reduce heat; simmer uncovered 10 minutes
Allow to cool
Stir strained lemon juice into cooled mixture; mix well
Pour mixture into shallow pan, freeze approximately 1 hour or until mixture is just firm
Remove from freezer, turn mixture into bowl, beat until smooth with fork
Fold in firmly beaten egg white
Return to pan
Freeze until firm
