DESSERT RECIPE: Pie Pastry

(6-single crust, or 3 double crust)

6-cups flour
4-tsp sugar
1-tsp salt
1-lb Tenderflake lard
1-egg (slightly beaten then add enough cold water to make 1-cup)


Mix flour, sugar, and salt
Add lard and cut up
Add the eggs and water mixture
Mix with a fork, do not over work or lard will break down
At this stage, it can be divided and frozen

For a single crust pie, take 1/6 of the above pastry and chill in fridge for 1/2 hour
Line pie plate and prick the bottom with a fork
Cook in a 450* oven for 12-15 minutes or golden
