DESSERT RECIPE:
Old Fashioned Raisin Spice Cake

Cake:
2-egg whites
1 1/3-cup all-purpose flour
1 1/2-tsp baking powder
1/2-tsp salt
2-tsp cinnamon
1-tsp allspice
1/2-tsp cloves
1/2-cup margarine, softened
1-cup sugar
2-egg yolks
2/3-cups milk
1-tsp vanilla
3/4-cup raisins
Icing:
1/4-cup margarine, softened
2-cups sifted icing sugar
1-tbsp lemon juice
1 to 2-tbsp cream or milk

Cake:
Beat egg whites to stiff but moist peaks
Combine flour, baking powder, salt, and spices in a large mixing bowl
Stir well to blend
Add margarine, sugar, egg yolks, milk and vanilla
Beat with electric mixer on medium speed until smooth, about 11/2 minutes
Stir in raisins
Fold in stiff egg whites
Spread batter evenly in greased 9" baking pan
Bake @375°F for 30-35 minutes
Cool completely
Icing:
Cream margarine, half of icing sugar, and lemon juice together until light
Gradually add remaining icing sugar and enough cream to make a smooth spreading consistency
Spread over cooled cake
