DESSERT RECIPE:
Raspberry Delight


1 ½-cups vanilla wafer crumbs, approx 40-44 wafers
4-tbsp butter, melted
2-tbsp sugar
4-egg whites
½-cup sugar
1-pint raspberries, slightly sweetened
1-2oz package dessert topping mix (instant whipping cream)
1-tbsp lemon juice


Combine crumbs, butter and sugar, mixing until well combined
Press firmly into a 9x9 inch pan
Beat egg whites until soft peaks form
Gradually add ½-cup sugar until peaks stiffen
Swirl meringue over crumb crust
Bake in a 325* oven for 12-15 minutes
Cool
Spread raspberries over meringue coated crust
Prepare the dessert topping mix
Gently stir in lemon juice
Spread over berries and chill well before serving
