DESSERT RECIPE: Rice Pudding


2/3-cup long grain rice
3 1/3-cup milk
1/4-tsp salt
1-tsp vanilla
1/3-cup sugar
1/8-tsp nutmeg
1-tbsp butter
1-egg yolk
Raisins


Combine all ingredients in a pot except the egg yolk and the raisins
Bring to a boil, and then turn down to medium for 30 minutes, stirring every 10 minutes
Remove from heat
Beat the egg yolk slightly
Take 1/2 of the rice mixture and add to the yolk, stirring very fast to temper the yolk
Return to pot and heat up again to boiling
Remove from heat and add the amount of raisins you like
