DESSERT RECIPE: Royal Sponge Cake


2-eggs
1-cup granulated sugar
1/2-tsp vanilla extract
1/2-cup evaporated milk
1-tbsp butter
1-cup flour
1/3-tsp salt
1-1/2-tsp baking powder


Beat eggs together until light and foamy
Gradually add sugar to eggs by sifting 3 tbsp at a time over the surface
Continue beating until mixture is stiff
Beat in vanilla
Scald milk and butter together and add to egg-sugar mixture, beating together until smooth and light
Mix flour, salt, baking powder and gradually fold into egg mixture with a spatula by sifting about 3 tbsp at a time over surface
Spread carefully into ungreased tube pan (line with parchment paper for easy removal)
Bake in preheated 350* oven for 50-60 minutes
Remove from oven and invert cake and pan on a wire rack and let stand until cool (about 1 hour)
Loosen with spatula and remove paper from bottom
