DESSERT
RECIPE: Shortbread Cookies
1-lb butter (don't substitute)
1-cup minus 2-tbsp sifted icing sugar
4-cups sifted all-purpose flour
Blend butter and sugar together thoroughly
Stir in flour and mix well together with hands
Chill
Heat oven to 300*
Roll out dough to 1/3 to 1/2" thick
Cut into desired shapes
Decorate with pieces of cherry or coloured sugar
Bake 20 minutes on an insulated baking sheet
Top of cookies should not brown
Makes about 4-dozen medium sized cookies
