RECIPE: Sweet Potato Pie
3-medium sweet potatoes (about 1-lb)(cooked and mashed to 2-cups)
1/2-cup sugar
1/4-cup brown sugar
1/2-tsp cinnamon
1/4-tsp ground allspice
1/4-tsp nutmeg
1/8-tsp salt
1/8-cup butter
3-slightly beaten eggs
1-cup buttermilk or sour cream
1-single crust pastry recipe
Prick potatoes with a fork and bake in a 450* oven for 40-50 minutes, until very tender
Cool until easily handled
Meanwhile, prepare pastry
Line a 9" pie plate with the pastry and crimp edges as desired
Line the pastry with a double thickness of aluminum foil
Bake at 450* for 8 minutes
Remove foil and bake for 4-5 minutes more until set and dry
For filling, scoop out potatoes into large mixing bowl
Mash with a potato masher (you should have 2-cups)
Stir sugars, cinnamon, allspice, nutmeg, and salt into potatoes
Add eggs and butter
Beat lightly with rotary beater
Gradually stir in buttermilk or sour cream
Pour into shell
To prevent over browning, cover edge of pie with foil
Reduce temperature to 375* and bake for 25 minutes
Remove foil and bake 25-30 minutes more until knife comes out clean
Cool on wire rack for 30 minutes
Chill 2 hours before serving
