Toffee Snowballs

1-cup unsalted butter, softened
1/2-cup icing sugar, sifted
1-tsp vanilla
2 1/4-cups all-purpose flour
1/2-tsp baking powder
1/4-tsp salt
3/4-cup toffee bits
1/2-cup mini chocolate chips

Preheat oven to 375*F
With an electric mixer, beat butter with sugar until light
Beat in vanilla
Using a wooden spoon, gradually stir in flour, baking powder and salt
Stir in toffee bits and chocolate chips
Roll heaping tablespoonfuls of dough into balls
Place on parchment lined baking sheet, placing about 2 inches apart
Bake in centre of oven for about 15 minutes or until lightly golden on the bottom and firm to the touch on top
Let cool slightly in pan on rack
Transfer to racks to complete cooling
Dust with more icing sugar before serving

Makes approx 48 cookies
