Vanilla Ice Cream

¾-cup sugar
1/8-tsp salt
1 ¼-cup whole milk
3-eggs, beaten
¾-cup whole evaporated milk
¾-cup whipping cream
1-vanilla bean, split, or 1-tbsp pure vanilla extract

Combine vanilla bean, sugar, salt & milk in saucepan
Cook over medium heat, stirring occasionally until mixture almost boils
Reduce heat to low
Slowly stir in ½-cup of the hot milk into the beaten eggs
Add eggs to remaining hot milk
Cook over low heat, stirring constantly until slightly thickened, about 2 to 3 minutes
Remove from heat and refrigerate at least 2 hours
Remove vanilla bean
Combine evaporated milk and whipping cream (& pure vanilla if using) and chilled mixture, stirring with whisk to combine
Pour into ice cream machine
Freeze according to ice cream maker instructions

During the last 5 minutes of freezing, you can add…chocolate chips, cookie pieces, fruit chunks etc
Fruit: add 1-cup of pureed fruit such as strawberries, peaches etc.
