GLUTEN FREE RECIPE: G.F. Cherry Chocolate Chip Cookies


1/2 cup margarine
1 1/2 cups white sugar
2 eggs
1-cup white rice flour
3/4 cup brown rice flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3-cup sour cream
1 cup chocolate chips
1 cup chopped cherries
1 tsp vanilla


Cream margarine, then gradually add the sugar.
Beat in the eggs and vanilla and continue beating until fluffy
Sift the dry ingredients and add them to the margarine/sugar mixture
Add the sour cream, and mix well
Fold in the chips and cherries
Chill for 1/2 to 1 hour before dropping by teaspoon onto a greased cookie sheet
Bake @ 400 degrees for 8-10 minutes

Makes about 60 cookies
