GLUTEN FREE RECIPE: Gluten Free Chocolate Cookies

2 cups G.F. flour mix
1/2 cups cocoa sifted
1/3 cups cornstarch
pinch of cinnamon
1 cup butter softened
2/3 cups granulated sugar
1 tsp. vanilla

Whisk together G.F.flour mix, cocoa, cornstarch and cinnamon
Set aside
In a large bowl, beat butter with sugar until light and fluffy
Beat in vanilla.
Stir in flour mixture in 3 additions, gently using hands if needed to incorporate.
Roll by tbsp into 1" balls - 2" apart on ungreased baking sheet.
Topping - Dip fork in sugar, press crisscross pattern into cookies, flatten to 1/4" thickness.
Bake in centre of 325 oven 18-20 minutes or until firm to touch
Cool completely on pan.
