GLUTEN FREE RECIPE: G.F. Cranberry Muffins

1/2 cup rice flour
1/2 cup any combination (soya, potato flour etc.)
2 tsp baking soda (or substitute baking powder)
2 eggs
1/4 cup cooking oil
1/2 cup white sugar
1/2 cup milk
2 tbsp lemon juice
1-cup cranberries
Some pecans

In a mixing bowl, sift dry ingredients
Make a well in the centre. In another bowl beat eggs, milk and oil
Stir in cranberries. Pour into well and stir until just mixed
Fill muffin cups 2/3 full and sprinkle a little topping on each muffin
Bake at 350 F for 15-20 minutes.
