FREE RECIPE: G.F. Pineapple Squares
Base:
1/2 cup butter
1/2-cup sugar
1 egg
1/2 tsp lemon extract
3/4 cup sweet rice flour
1/2 tsp salt
1/2 cup white rice flour
1 tsp G.F. baking powder

Middle:
19 oz. Can crushed pineapple
1 1/2 tsp minute tapioca
1/4 cup sugar |
Topping:
2 eggs, beaten
3/4 cup sugar
3 tbsp melted butter
3/4 cup medium coconut |
*Sweet rice flour also can be called glutenous rice flour
Preheat oven to 350 F. ; grease 8x8 inch pan
Base: Cream together butter and sugar; beat in egg and lemon extract
In separate bowl combine sweet rice flour, white rice flour, salt and baking powder
Add to butter mixture, mixing well
Pat into bottom of pan.
Middle: To very well drained pineapple, add minute tapioca and sugar; mix
well
Spread over unbaked base.
Topping: Beat eggs until light and fluffy
Add sugar, melted butter and coconut, mixing well
Spread over pineapple layer
Bake for approximately 40 minutes.
Cool before cutting with moistened knife
Recipe also works well doubled and baked in 9x13 inch pan.
