Chicken Skewers with Peanut Dipping Sauce

1/4-cup light soy sauce
2-tsp Asian chili paste
4-skinless, boneless chicken breasts
1/4-cup smooth peanut butter
2-tbsp ketchup
2-tbsp orange juice
1-tbsp honey
1-tbsp limejuice
1-clove garlic, minced

In a shallow baking dish, stir together half of the soy sauce and half of the chili paste
Slice each chicken strip lengthwise into long thin strips
Thread onto skewers
Roll the skewers in the baking dish to coat well; set aside
Place chicken skewers on a greased grill over medium-high heat
Grill, turning often for 8-10 minutes or until chicken is no longer pink inside
Serve with dipping sauce

Dipping Sauce:
Combine the remaining soy sauce, chili paste peanut butter, ketchup, orange juice, honey, limejuice and garlic; mix well
Can be served cold, or warm in microwave for 40-60 seconds on high
