MAIN DISH RECIPE:
 Chickpea and Pea Stew

4-tbsp olive oil
2-medium onions, chopped
2-cloves garlic, minced
1-small hot pepper, finely chopped
3-medium tomatoes, chopped
1-19oz can chickpeas, not drained
2-cups frozen green peas
1 ½-cups water
1-tsp oregano
½-tsp salt
¼-tsp pepper
¼-tsp ground coriander
Pinch-turmeric


Heat oil in medium sized saucepan
Sauté onions, garlic and hot pepper over medium heat for 10 minutes
Add tomatoes and stir fry for a few minutes
Add remaining ingredients except green peas
Bring to a boil
Cover and cook over medium heat for 30 minutes stirring occasionally
Add green peas in last 2 minutes
Garnish with chopped parsley or coriander
Serve hot or cold
