DISH RECIPE: Chili Con Carne
Vegetable cooking spray
1-lb lean ground beef
1½-cups chopped onion
1-cup chopped green pepper
2-cloves garlic, minced
2-tbsp chili powder
2-tsp dried cumin
1-tsp dried oregano
¼-tsp ground cloves
2-14oz cans whole tomatoes, drained and coarsely chopped
1-6oz can tomato paste
¾-cup beer or beef broth
1-tbsp packed brown sugar
1-tsp unsweetened cocoa
1-15oz can red kidney beans, rinsed. Drained
Salt & pepper to taste
½-cup shredded cheddar cheese
½-cup thinly sliced green onions
Spray large saucepan with cooking spray
Heat over medium heat until hot
Add ground beef, onions, green pepper and garlic
Cook over medium heat until meat is browned and vegetables tender about 5-8 minutes
Add chili powder, cumin, oregano and cloves; cook 1-2 minutes longer
Add tomatoes and liquid, tomato paste, beer, brown sugar and cocoa to meat
Heat to a boil, reduce heat and simmer, covered 1 hour
Stir in beans and simmer, uncovered to thicken
Season with salt & pepper
Spoon chili into bowls and top with green onions and cheese
Makes 4-6 servings
