Chipotle & Apple Chicken Breasts

4-bacon strips, diced
2-small tart apples, peeled and coarsely chopped
4-tbsp dried minced onion
4-tbsp unsweetened applesauce
1 to 2-tsp chipotle peppers in adobo sauce
4-boneless and skinless chicken breasts
4-tsp olive oil
2-tsp all-purpose flour
1-cup unsweetened apple juice
1/2-tsp salt
1/4-tsp pepper

In a small skillet, fry the bacon until crisp; remove and place on a paper towel
Drain the fat except for 2 tsp
Sauté the apple until tender
Add the onion, applesauce, chipotle peppers and bacon; sauté another 2 minutes
Cut a pocket in each chicken breast and stuff with apple mixture
In a small skillet, brown the chicken in oil on both sides
Transfer to a baking dish
Bake uncovered at 425*F for 12-15 minutes or until chicken juices run clear
Meanwhile, add the flour, apple juice, salt and pepper to the skillet
Stir to loosen brown bits
Bring to a boil; stir for 2 minutes
Serve with chicken
