MAIN DISH RECIPE:
Doug's Fried Chicken

Coating:
1/2-tsp Celery Salt
1/2-tsp Thyme
1-tsp Black Pepper
1-tsp Onion Powder
1-tsp Sage
1-tsp Cayenne
1-tsp seasoning salt
1-tsp Cumin
2-tsp Garlic Powder
2-tsp Paprika
1-tbsp Salt
1-1/2 cup Flour
2-packages of chicken Bovril
Doug's Fried Chicken
10-Chicken Thighs
1-cup Buttermilk
Vegetable oil, for frying
Optional: 1-egg white

Combine all the seasoning mix ingredients in a medium sealable plastic bag
Put the chicken pieces in a sealable bag and cover with the buttermilk
Let marinate in the buttermilk 2 hours, tossing occasionally
In a large sealable bag, put 2-3 pieces of the chicken and some of the seasoning mix to coat.
You probably won't use all of the mix, so don't contaminate the mix with the chicken unless needed
Seal and shake to coat evenly
Repeat for rest of chicken
Lightly brown in skillet a few at a time, with 1/2 inch of hot vegetable oil in it (approx 1 minute per side)
Remove and place on a wire rack in a single layer in shallow baking pan
Bake uncovered for 35 minutes at 400*F

Optional: Half way through the baking, gently baste the egg white on the chicken, and dust more seasoning on the chicken
