MAIN DISH RECIPE: Garlic Lime Chicken


½-cup lime juice
¼-cup cider vinegar
6-garlic cloves, minced
2-tbsp minced fresh oregano (2-tsp dried)
1-tbsp dried coriander
2-tsp pepper
1-tsp salt
1-tsp paprika
8-bone-in chicken breasts
¼-cup vegetable oil

In a large resealable bag, combine everything but the vegetable oil
Seal bag and toss to coat
Refrigerate for at least 8 hours, best overnight
Discard the marinade
In a skillet, brown the chicken on all sides in the oil
Place in a greased 15” x 10” baking dish
Bake uncovered at 375* for 30-35 minutes or until juices run clear
