MAIN DISH RECIPE:
Grilled Peanut Butter & Banana Panini

1-tbsp margarine
4-slices thick white or whole wheat bread
1/4-cup smooth or crunchy peanut butter
2-ripe bananas
1/2-cup egg substitute, well shaken
2-tbsp milk
2-tsp packed brown sugar
1/4-tsp cinnamon


Preheat a grill pan or a panini press to medium
Grease with some of the margarine
Lay the bread out on a work surface
Spread peanut butter evenly over all four slices
Slice the bananas over two of the pieces of bread
Top with remaining bread
Whisk together the eggs substitute, milk, brown sugar and cinnamon
Dip the sandwiches into the egg mixture until evenly coated
Grill for 1 to 2 minutes per side or place in a panini press, close and cook for 1 to 2 minutes
