1-tsp grated lime rind
2-tbsp lime juice
2-tsp ground cumin
2-tsp ground coriander
2-tsp dried oregano
1/4-tsp salt
4-veal loin chops
Lime wedges
In bowl, combine lime rind and juice, cumin, coriander, oregano and
salt
Rub over both sides of veal; let stand for 15 minutes
Grill over medium heat for about 4 minutes per side for medium
doneness
Or
Place on foil-lined rimmed baking sheet and broil for about 4
minutes per side
Serve with lime wedges.
