MAIN DISH RECIPE:
Meat Sticks

2 1/2-lb pork, cubed
2 1/2-lb veal, cubed
1/2-cup flour
4-eggs
1 1/2-cup breadcrumbs
1/2-cup corn flake crumbs
1/2-cup fresh grated Romano or Parmesan cheese
2 1/2-tsp salt (total)
2 1/2-tsp pepper (total)
2 1/2-tsp garlic powder (total)
6-tsp dried parsley (total)
Vegetable oil for frying


In a shallow dish, combine 1/2-cup flour, 1/2-tsp salt, 1/2-tsp pepper, and 1/2-tsp garlic powder
In a shallow bowl, combine 4-eggs with 1-tsp salt, 1-tsp pepper, and 1-tsp garlic powder
In a shallow dish, combine breadcrumbs and corn flake crumbs with 1-tsp salt, 1-tsp pepper, 1-tsp garlic powder and Romano cheese.
Put cubed pieces of meat on meat sticks, alternating between pork and veal (6 pieces total per stick)
Dip the meat sticks in the flour mixture and coat well
Dip the meat sticks in the egg mixture and coat well
Now dip the meat sticks in the breadcrumb mixture and coat well
In a frying pan, put enough vegetable oil in the pan to cover bottom and heat
Fry the meat sticks a few at a time in the oil until browned
Add more oil as necessary
At this point, you may freeze for later use
Bake in a 350* oven for 15 minutes (325* if using a glass baking dish)
Remove from oven and turn the meat sticks to the other side
Return to oven for another 15 minutes

Should make about 34 meat sticks with 6 pieces per stick
