MAIN DISH RECIPE: Mexican Meatloaf

1-large can Rotel
1-bag Frito's corn chips
3-pkgs of your favorite taco seasoning mix
3-eggs
1-can French's French Fried Onions
Some cut up jalapenos (if you dare)
5-lbs hamburger


In a large mixing bowl mix all the ingredients (like you would regular meatloaf)
Cook in preheated 350*F oven for about an hour
Remove from oven and drain fat
Add Mexican cheese and place back in oven for 5 to 10 minutes until melted
For presentation I like to slide the meat carefully out of the pan (turn pan upside down onto a cutting board) wash the pan and then carefully place the 
meat back in to the pan
Now where there is room in the pan (because the meat has now shrunk) place a bed of lettuce around the edges and on top of the lettuce alternate a 
dollop of sour cream and either salsa or cut up tomatoes
