MAIN DISH RECIPE:
Pork Roast Marinade & Spice Rub
 
1-2 to 3-lb pork loin roast

Marinade:
1-cup plain yogurt
1-shallot, minced
2-cloves garlic, minced
2-tsp Dijon mustard
2-tsp fresh limejuice
1/2-tsp freshly ground black pepper
1/8-tsp kosher salt

Spice Rub:
2-tbsp cumin seeds, toasted
1-tbsp dill seeds
1-tsp ground cinnamon
1-tsp freshly ground black pepper
1-tsp kosher salt
1/8-tsp crushed red pepper flakes

Pork Roast Marinade & Spice Rub

Combine all the marinade ingredients together
Place pork roast in a re-sealable bag
Rub the marinade all over and refrigerate for 4 to 6 hours

Meanwhile, combine all rub ingredients and grind in a spice grinder
Just before grilling, scrape off any excess marinade
Coat the roast well with the rub mixture
Grill with in-direct heat for about 2 hours or until internal temperature reaches 160*F
Let rest 15 to 20 minutes before slicing

Spice rub makes about 1/4-cup spice rub, enough for a 2 to3-lb roast
