Salisbury Steak with
Onion Sauce

Salisbury Steaks
3/4-lb ground beef
2-tbsp minced fresh parsley
1-tbsp minced green onions
1/2-tsp kosher salt
1/4-tsp ground black pepper
1-tbsp all purpose flour, divided
2-tsp olive oil
Onion Sauce
1-cup sliced onion
2-tsp minced garlic
1 1/2- tsp tomato paste
1-cup low sodium beef broth
2-tbsp dry red wine
1/4-tsp dried thyme leaves
Cheese Toasts
2-slices French bread or baguette, cut diagonally 1/2-inch thick
1-tbsp softened butter, divided
1/4-tsp minced garlic
pinch of paprika
pinch of salt
2-tbsp shredded Swiss cheese
1-tbsp shredded Parmesan cheese
To Serve
1-tbsp minced fresh parsley
1-tbsp shredded Parmesan cheese
Combine the ground beef, 2-tbsp parsley, green onions, salt &
pepper; shape into 2 oval patties
Place 2-tsp of flour in a shallow dish; cover each patty with flour
to coat
Heat the olive oil in a sauté pan over medium-high heat
Add in the patties and sauté until browned, about 3 minutes per side
Remove patties from pan
Add onions to pan; sauté over medium heat for 5 minutes
Stir in garlic and tomato paste and sauté until paste begins to
brown, about 1 minute
Sprinkle mixture with remaining 1-tsp flour and cook for 1 minute
Stir in beef broth, wine and thyme
Return patties to the pan and bring sauce to a boil
Reduce heat to medium-low
Cover and simmer for 10 minutes
Meanwhile: Preheat oven to 400*F
Place the bread on a baking sheet
Combine the butter, garlic, paprika and salt; spread on one side of
the bread
Combine the Swiss cheese and Parmesan cheese; sprinkle on bread
slices
Bake until bread is crispy and the cheese is bubbly, about 10
minutes
Serve patties on Cheese Toasts with onion sauce ladled over top
Garnish with parsley and Parmesan
