MAIN DISH RECIPE: Smoked Pork Shoulder Blade Roast

2/3-cup brown sugar
1/3-cup garlic salt
1/2-cup paprika
3-tbsp pepper
2-tbsp chili powder
1-tbsp beef bouillon powder
1-tbsp ground ginger
1-tbsp onion powder
1-tbsp ground coriander
1-tbsp cayenne pepper
Mustard of choice (Dijon, French's etc)

Place sugar in an ovenproof pan
Cook at 200*F, stirring occasionally until dried
Crumble through strainer
Combine all the dry ingredients
Smother the pork with your favourite mustard
Rub the dry mix all over the roast until coated
Keep remaining mixture in a re-sealable bag for next use
Smoke in a water smoker for approximately 8 hours at a temperature close to 225*F
