Szechwan Tomato & Beef Stir-Fry

1/2-lb tender beef steak
5-tbsp soy sauce
2-tbsp corn starch
1-tbsp dry sherry
2-cloves minced garlic
1/2-tsp crushed red chili pepper
3/4-cup water
3-tbsp vegetable oil
1-large onion cut in chunks
1-cup thinly sliced carrots
12-quartered mushrooms
2-tomatoes cut in chunks
Chopped fresh parsley

Szechwan beef stir-fry

Slice beef into thin strips
In bowl, combine 1 tb. of soy, 1tb of cornstarch with sherry & garlic.
Stir in beef
Let stand 15 min
Combine remaining soy, cornstarch, & red chili pepper
Stir in water
Heat 1 tb. of oil in wok over hi heat
Add beef mix & stir fry 1 min
Remove from pan
Heat remaining oil in same pan
Add mushrooms, onions & carrots
Stir fry 3 min longer
Add beef & soy mix to wok
Cook & stir until mix boils & thickens
Add tomato & continue cooking until tomato is hot
Sprinkle with parsley
Serves 4
