RECIPE: Tourtiere
(Meat Pie)
12oz-ground pork
8oz-ground beef
4oz-onion, finely diced
2oz-celery, finely diced
2oz-leek, white only, diced
1-clove garlic |
1/2oz-chopped parsley
4oz-potatoes, peeled, diced
1/2 -potato for grating
2oz-butter
Salt, pepper to taste
Pinch of nutmeg, ground clove
and cinnamon
1-egg
1 lb-pie pastry |
Sauté meat in butter without browning
Add veggies to meat
Let simmer, stirring occasionally until veggies done
Add a little water to keep mix moist
Grate 1/2 raw potato into mix
Stir until it forms meat-sauce-like consistency
Line 5 -4" tart shells with dough & fill with meat mix
Egg wash edge
Cover with dough & seal
Egg wash the top
Bake @375*F for 25 minutes
