Lisa's Bacon and Spinach
Spaghetti

Crockpot Recipes
400g (14oz) spaghetti
oil cooking spray
1-medium onion, finely chopped
2-garlic cloves, crushed
4-pieces of bacon, rind removed, chopped into bite size pieces
1-bunch English spinach, shredded
3-ripe tomatoes, diced
1-tbsp olive oil
1-tbsp balsamic vinegar |

Cook pasta in boiling water as per packet directions
Once cooked drain the pasta, reserving 1/4 cup of the pasta water
Return pasta and water to saucepan
Meanwhile, heat a non-stick frying pan and spray lightly with oil
Cook onion and garlic, stirring for 3 minutes or until soft
Add the bacon, cook for a further 3 to 4 minutes
Add bacon mixture, spinach, and tomatoes to the pasta
Toss over low heat until spinach wilts
Add oil, vinegar, and salt and pepper to taste
Toss well and serve
immediately
