PASTA RECIPE:
Basil & Garlic Cavatelli
Pasta
2 eggs
10 fresh basil leaves (chopped)
3 cloves garlic (minced)
1/4 tsp black pepper
1-cup ricotta
2 tb grated Parmesan
2 cups flour

Sauce
2-tb olive oil
2 cloves chop garlic
2-28oz cans Italian tomatoes
1 tsp oregano
3-4 fresh basil leaves (chopped)
1 tb fresh parsley (chopped)
1 tsp sugar
4 cooked Italian sausages |
Pasta
In food processor, combine eggs, basil, garlic & pepper
Process until mixed
Add ricotta, & Parmesan, blend
Add flour slowly & mix in enough to form a dough
Shape into a ball & chill for 1 hour
Cut dough into 4 parts & roll each part into long tube
Cut into 1/2 " pieces
Flour lightly to prevent sticking
Drop into salted boiling water & cook for 5-6 mins
Drain & serve with tomato-sausage sauce
Sauce
In saucepan, cook garlic in oil until softened
Add tomatoes, oregano, basil, parsley, & sugar
Bring to boil. Cut sausage into chunks & add to sauce
Simmer about 30 min (until thick)
Season with salt & pepper to taste
