PASTA
RECIPE:
Chickpea Pasta Sauce
1-tbsp oil
1-clove garlic, minced
1-28oz can of tomatoes, diced
1-tsp basil
1-tsp oregano
1/2-tsp pepper
1-19oz can of chickpeas, drained
1-cup fresh parsley, chopped
2-cups sliced fresh mushrooms
2-cups ditali pasta
Parmesan cheese
In a large saucepan, heat oil over medium-high heat
Add garlic and cook for 30 seconds
Add tomatoes, basil, oregano, and pepper
Stir in chickpeas
Bring to a boil over high heat
Reduce heat to medium-low and simmer for 10 minutes or until sauce
thickens
Meanwhile in a skillet, cook mushrooms over medium-high heat for 3
1/2-minutes
Set aside
Cook pasta
Toss hot pasta with sauce
Top with mushrooms
Sprinkle with parsley and top with grated parmesan cheese
