PASTA RECIPE: Herb
Butter Pasta
1/4-cup butter
2-tbsp chopped fresh parsley
2-tbsp chopped
fresh basil or 2-tsp
dried
1-tbsp lemon juice
1-green onion, chopped
1/2-tsp grated lemon rind
3/4-cup low-fat cottage cheese
1/2-cup grated Parmesan
1-lb spinach noodles
Salt & pepper
Grated Parmesan cheese to serve |

In food processor, process butter, parsley, basil, lemon juice, green onion & lemon
rind until smooth
Add cottage cheese & Parmesan
Process just till combined
Transfer to medium bowl
Cook pasta
Drain well
Add sauce & toss well.
Season with salt & pepper.
Serve with grated Parmesan
Sauce will keep several days in fridge, ready for an instant pasta supper.
