Nawlin’s Sausage
3-lbs ground pork
¼-cup Rustic Creole Rub
2-tbsp paprika
1-tbsp minced garlic
1 ½-tsp freshly ground black pepper
1-tsp salt
¾-tsp file powder
¾-tsp chili powder
¾-tsp crushed red pepper flakes
½-tsp ground cumin
2/3-cup red wine
Rustic Creole Rub
8-tbsp paprika
3-tbsp cayenne
5-tbsp ground black pepper
6-tbsp garlic powder
3-tbsp onion powder
6-tbsp salt
7-tsp dried oregano
7-tsp dried thyme
Combine all ingredients, mix well & stuff into hog casing
