SEAFOOD RECIPE:
Curried Tuna Wrap

½-cup dry whole-wheat couscous
¾-cup boiling water
1-6oz can of chunk light tuna
¼-cup plain yogurt
1-tsp curry paste
1-green onion chopped
½-cup shredded carrot
1-small apple, cored and diced
Pepper to taste
4-whole wheat wraps
4-large lettuce leaves


Put couscous in a heatproof bowl and pour in boiling water
Cover and let stand 5 minutes or until water is absorbed
Fluff couscous with a fork and cool to room temperature
Combine tuna, yogurt, curry paste, onion, carrot, and apple
Gently blend tuna mixture and couscous
Season to taste with pepper
Divide couscous mix, and lettuce onto the four wraps
Fold bottom quarter of the wrap over the filling
Roll up the sides to enclose
