RECIPE:
Haddock with Tomato,
Olive and Cheese Topping
1/2-cup chopped plum tomatoes
1/2-cup chopped sun-dried tomatoes
1/2-cup shredded mozzarella cheese
1/4-cup chopped black olives
1/4-cup crumbled feta cheese or goat cheese
1-tsp crushed garlic
Salt, pepper and oregano to taste
1-lb haddock |

Preheat oven to 425*F
Combine the topping ingredients in a bowl and mix well
Place the haddock on a foil lined baking sheet and top with tomato
mixture
Bake 10 minutes per inch of fish thickness, or until the fish flakes
easily with a fork
